INGREDIENTS
1 ½ cups P.A.N. Pre-cooked Yellow Corn Meal
½ cup all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
½ red onion, diced
2 ½ cups buttermilk
1 egg, lightly beaten
PREPARATION

In a bowl, combine the P.A.N. Pre-cooked Yellow Corn Meal, all-purpose flour, baking powder, baking soda and salt.

In another bowl, combine the buttermilk and lightly beaten egg. Next, add the red onion. Add the wet ingredients to the dry ingredients and combine until the mixture is creamy , yet thick.

In a heavy-bottomed pot, heat the vegetable oil for frying.

Gently drop the batter by spoonfuls into the oil. Fry until golden, transfer to paper towels to drain and serve hot.
