
INGREDIENTS
P.A.N. Flour Mix for Celiacs:
6 tablespoons P.A.N. Pre-cooked White Corn Meal
9 tablespoons brown rice flour
4 tablespoons + ½ teaspoon rice flour
4 tablespoons tapioca starch
4 tablespoons potato starch
10 tablespoons (1 stick + 2 tablespoons) unsalted butter
3 eggs
1 cup sugar
2 medium bananas
¾ cup whole milk
1 teaspoon ground cinnamon
Zest of half a lemon
1 ½ teaspoons baking powder
½ teaspoon baking soda
1 teaspoon xanthan gum
1 teaspoon vanilla extract
¼ cup honey
1 teaspoon salt

PREPARATION
Preheat the oven to 355ºF. Grease and flour a rectangular baking pan. Set aside.
In a bowl, mash the bananas using a fork. Next, add the cinnamon, lemon zest and vanilla extract. Set aside.
Using an electric mixer, cream the butter. Add the sugar and beat.
Add the banana mixture and the eggs one at a time. Add in dry ingredients, honey, milk, xanthan gum, baking soda and the baking powder and beat until thoroughly combined.
Pour the batter into the pan and bake for 50 minutes. Remove from the oven and serve.
