INGREDIENTS

1/2 cup of Precooked White Cornmeal P.A.N.
1 cup of butter (no substitutes), softened.
1 1/2 cups of sugar.
3 eggs.
1 1/2 cups of light corn syrup.
1/2 cup of milk.
1 teaspoon of vanilla extract.
3 tablespoons of all-purpose flour.
2 unbaked pie crusts (9 inches).
Whipped cream, optional.

PREPARATION

    In a large bowl, beat the butter and the sugar.

    Add the eggs one at a time. Add the corn syrup, milk, and vanilla, and mix well.

    Add the cornmeal and the flour.

    Pour into the pie crusts.

    Bake at 350° for 25 minutes. Reduce the temperature to 300° and bake for an additional 20–25 minutes, or until the pies are set.

    Let cool. Garnish with whipped cream, if desired.
